With sports video games I used to play years ago, I'd play them at a higher difficulty. However, it didn't take long to learn how to easily win. For example, on my Nintendo 64, the NFL game I had was easy to win when playing against the computer. All I had to do was rush the quarterback on every offensive down. I'd always end up winning by a crazy score like 62-10.
